Crack BLT Skillet Totchos

If you haven’t figured it out yet, those of us in the Country Rebel Kitchen are crazy about bacon, ranch and tater tots. You can imagine our excitement when we meshed all of those together to make a tasty appetizer just in time for the big game. If we’re being honest, this recipe will be enjoyed all year round, with or without a big game.
What exactly did we come up with when we combined bacon, ranch and tater tots? Crack BLT Totchos! Tater tots meets nachos in this easy-to-make one-pan treat. Frozen tots are tossed with dry ranch dressing mix and baked before being topped with loads of cheese, bacon, tomatoes, chopped baby spinach and a creamy sauce. Why do we call it “crack”? It’s a common term used to describe the combination of ranch dressing, bacon and cheese flavors because the deliciousness is so addictive!

CRACK BLT SKILLET TOTCHOS
28 oz. bag frozen tater tots
1 oz. packet dry ranch dressing mix
12 oz. bacon, chopped and cooked
2 cups cheddar jack cheese, shredded
1/2 cup chopped baby spinach
1/2 cup diced tomatoes
1/3 cup mayonnaise
1 Tablespoon heavy cream (or milk)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
chives for garnish
Preheat oven to 425 degrees F. Generously grease an large oven-proof skillet or baking sheet.
Pour tater tots in a gallon-sized storage bag and toss with ranch dressing mix. Arrange in skillet and back for 20 to 25 minutes or until crispy.
Remove tots from oven and top with cheese, bacon, and spinach. Return to oven for an additional 5 minutes or until cheese is melted. Remove from oven and top with tomatoes.
In a small bowl, whisk together mayonnaise, cream, garlic powder and onion powder. Drizzle over the top of the hot totchos. Garnish with chives, if desired. Enjoy while hot!
