Two-Minute Strawberry Cake In A Jar

Strawberries are in abundance this year and we can’t get enough of them! From bread to ice cream to cobblers and crisps, strawberries are the perfect addition to any recipe. But, if you’re only baking for one or two it can be tough to find recipes that don’t leave you with a refrigerator full of leftovers.

The good news is that we’ve found a way to make the most of strawberry season that will only take a few minutes of your time and will make just the right amount for one or two (if you’re feeling generous). This recipe for Strawberry Cake is baked in a pint jar in just two minutes and requires ingredients that you most likely already have in your pantry. Top the warm cake with a scoop of vanilla ice cream and more strawberries and you’ll have a recipe you’ll be making again and again.

STRAWBERRY CAKE IN A JAR

INGREDIENTS:

2 Tablespoons butter
1/4 cup all-purpose flour
2 Tablespoons granulated sugar
1 large egg
1 Tablespoon milk
1 teaspoon vanilla extract
1/4 teaspoon baking powder
2 large strawberries, diced

INSTRUCTIONS:

Place butter into a pint mason jar. Microwave 15 seconds or until melted. Add remaining ingredients, except for strawberries, to jar. Stir well. Fold in strawberries.

Microwave 1 minute 30 seconds to 2 minutes or until top of cake looks dry. Use a potholder or towel to remove jar from microwave. JAR WILL BE HOT! Cool 5 minutes then top with vanilla ice cream and more chopped strawberries, if desired. Enjoy!
