Grilled Garden Tomato & Ranch Sandwiches

Nothing says summer like fresh fruits and veggies! When the garden is overrun with the season’s bounty, we get to work developing new recipes to help us make the most of our summer spoils.

One of our most favorite (and easiest!) summer meals requires only 5 ingredients and less than 15 minutes. While the tomato sandwich is a seasonal staple for many, we took the meal to the next level by adding one special ingredient. The addition of ranch dressing mix gives the sammie a refreshing, comfort food feel, and we’re pretty sure it’s a recipe you’ll want to enjoy all year round.

GRILLED GARDEN TOMATO & RANCH SANDWICH
Makes 4 sandwiches

INGREDIENTS
1/2 cup butter, softened
2 Tablespoons dry ranch dressing mix
8 slices white bread
Mayonnaise
2 large tomatoes, cut into 1/4″ slices

INSTRUCTIONS
Cream together butter and ranch dressing mix until smooth. Spread over one side of each slice of bread. Place bread, buttered side down, in a large skillet over medium heat until golden brown and crispy.

Remove bread from pan and spread mayonnaise on non-grilled side. Add tomato slices to four slices of bread and top with remaining bread slices. Enjoy while warm!
