How To Make Bourbon & Peeps Mini S’mores Pies

We’re always on the lookout for easy, tasty desserts that we can enjoy all year round.

So, we took two of our favorite timeless treats (Peeps and s’mores) and combined them to create a fun and easy dessert that we know you’ll love…Bourbon & Peeps Mini S’mores Pies.

What makes these little gems even more special is that they can be easily adapted to fit your taste. Don’t like bourbon? Leave it out! Can’t find Peeps? Use regular large marshmallows instead. Easy, peasy!

The rich chocolate filling is a four-ingredient whipped ganache. Don’t let the fancy wording fool you. This recipe is as easy as they come. Resist the urge to just eat the filling by the spoonful! The graham cracker crust and toasted marshmallow take it to the next level. ENJOY!

BOURBON & PEEPS MINI S’MORES PIES

INGREDIENTS

For Crust:
1 1/4 cups graham cracker crumbs
5 Tablespoons butter, melted
1/2 teaspoon ground cinnamon

For Filling:
2 1/2 cups semi-sweet chocolate chips
2 Tablespoons butter
2 cups heavy whipping cream
2 teaspoons Jim Beam Bourbon

Top with your choice of 12 Peeps rabbits or chicks.

INSTRUCTIONS

For Crust:
Preheat oven to 375 degrees F. Line muffin tin with paper liners (12).

Stir crust ingredients together in a small bowl until all crumbs have been moistened. Place two Tablespoons crumb mixture in each paper liner. Use the bottom of a glass or measuring cup to press crumbs firmly into the bottom. Bake for 5 minutes. Set aside while you prepare the filling.

For Filling: 
Bring a small pan of water to a boil, then reduce to a simmer. Place chocolate chips in a heat-proof bowl and place over simmering water. Add butter and stir occasionally until melted. Remove from heat. Add whipping cream and bourbon and stir until smooth.

Allow to cool at room temperature for 10 minutes, then place bowl on top of another bowl filled with ice. Using an electric hand mixer, beat at medium/high speed until light and fluffy. Divide evenly among crust-lined cups. Chill for 1 hour or until ready to serve.

Before serving, top each mini pie with a Peep marshmallow of your choice. Use a kitchen torch to toast the marshmallow. NOTE: If you don’t have a kitchen torch, place Peep on a small plate and microwave for 5 to 10 seconds or just until it starts to puff up. Place on mini pie and enjoy!
